To begin, the grapes are harvested and fermented, creating flavoursome, antioxidant-rich wines. The alcohol is then removed from the wine using advanced, custom-modified Spinning Cone Column technology. The process is quick and gentle, allowing the alcohol to be removed while retaining the varietal flavours and aromas. This is a physical process during which there are no chemicals added to the wine.
Through the alcohol removal process, depending on the wine varietal, considered additions are also made; for example, some varietals like Chardonnay, Shiraz and Cabernet may receive some oak treatment. All wines receive a small amount of varietal juice concentrate that adds richness to the palate.
